Chef Tarique Aziz is redefining fine dining, blending flavours and creativity to craft unforgettable culinary experiences.
Speaking at a recent Singleton event, Aziz shared his journey, philosophy, and how his approach to cooking aligns with the ethos of Singleton whisky.
Born in Kolkata, India, Aziz was raised in a family of doctors and engineers but found his true calling in the kitchen.
“Growing up, I spent a lot of time cooking with my mother, who had lost her sight. I had no idea back then that those moments would shape my future,” he said.
Now serving as the Executive Chef at the Gem Forest Hotel Nairobi – MGallery Collection, Aziz leads a team of chefs with a commitment to excellence and innovation. His philosophy is centred on the idea that food is more than sustenance; it is an experience that creates lasting memories.
“For me, cooking isn’t just about preparing food—it’s about creating moments that people will remember,” he explained.
One of Aziz’s signature dishes, a rich risotto with lamb chops glazed in 15-year-old Singleton whisky, exemplifies his approach.
“The complexity of the whisky adds depth to the dish, elevating the entire dining experience,” he said adding that his goal is to create pairings that allow food and drink to enhance one another, offering guests a unique way to appreciate both.
Aziz also spoke about his leadership style, which prioritises collaboration and sustainability.
“It’s about delivering the best food while understanding the importance of working together,” he said.
He further emphasised reducing food waste and experimenting with diverse flavours, drawing inspiration from his global culinary experiences in Indonesia, the Middle East, and beyond.
Reflecting on his journey, Aziz shared a deeply personal aspect of his career.
“The one regret I have is not being able to cook a special meal for my mother. But through my cooking, I honour her every day,” he said.
At the heart of his work is the desire to bring people together through food.
